For the Streusel Topping:
1/2 cup all-purpose flour
1/4 cup packed brown sugar
1/4 cup granulated sugar
1/4 teaspoon ground cinnamon
3 tablespoons cold unsalted butter, cut into small pieces
Instructions
Preheat your oven to 375 degrees Fahrenheit. Line a 12-cup muffin tin with paper liners or grease well.
Prepare the streusel topping first. In a small bowl, combine the flour, brown sugar, granulated sugar, and cinnamon. Cut in the cold butter using your fingers or a pastry blender until the mixture resembles coarse crumbs. Place this mixture in the refrigerator while you prepare the batter.
In a large bowl, whisk together the 1 3/4 cups flour, 3/4 cup granulated sugar, baking powder, and salt.
In a separate medium bowl, whisk together the melted butter, egg, milk, and vanilla extract.
Pour the wet ingredients into the dry ingredients. Mix gently with a spatula until just combined. Do not overmix; a few lumps are fine.
Gently fold in the chopped peaches until they are evenly distributed throughout the batter.
Spoon the batter evenly into the prepared muffin cups, filling each about two-thirds full.
Remove the streusel topping from the refrigerator and sprinkle a generous amount over the top of each muffin. Press the topping lightly onto the batter.
Bake for 18 to 22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Notes
If you use canned peaches, pat them dry with paper towels before adding them to the batter to prevent the muffins from becoming too wet.
