Make these satisfying, easy baked bars featuring rolled oats, rich peanut butter, and melted chocolate chips. They are perfect for lunchboxes or a quick sweet treat.

  • 1 cup unsalted butter, softened
  • 1 cup packed light brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup creamy peanut butter
  • 2 1/4 cups old-fashioned rolled oats
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350 degrees F. Line a 9×13 inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.
  2. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Beat in the eggs one at a time, then mix in the vanilla extract and peanut butter until just combined.
  4. In a separate medium bowl, whisk together the rolled oats, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just incorporated. Do not overmix.
  6. Fold in 1 cup of the chocolate chips.
  7. Press the dough evenly into the prepared baking pan. Sprinkle the remaining 1/2 cup of chocolate chips over the top.
  8. Bake for 22 to 25 minutes, or until the edges are lightly golden brown and the center is set.
  9. Let the bars cool completely in the pan on a wire rack before lifting them out using the parchment paper overhang.
  10. Cut into squares. These are the best chewy dessert bars when cooled fully.

Notes

  • For a slightly healthier snack bars recipe, substitute half the butter with unsweetened applesauce.
  • If you prefer a firmer bar, chill the dough for 30 minutes before pressing it into the pan.
  • These peanut butter chocolate chip treats store well in an airtight container at room temperature for up to four days.
