Instructions
Combine the protein powder, oat flour, and salt in a medium mixing bowl.
Add the softened butter, maple syrup, and vanilla extract to the dry ingredients.
Mix everything together using a sturdy spoon or your hands until a thick, uniform dough forms.
If the mixture seems too dry, add the milk one teaspoon at a time until the dough holds together when pressed.
If using, gently fold in the rainbow sprinkles.
Roll the dough into small, uniform balls, about 1 inch in diameter. You should get about 12 to 15 balls.
Place the finished protein balls on a parchment-lined plate or tray.

Notes
For a keto cake batter protein snack, substitute the maple syrup with a sugar-free syrup and use almond flour instead of oat flour.
