- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup pure maple syrup
- 3 tablespoons Dijon mustard
- 1 tablespoon apple cider vinegar
- 1 clove garlic, minced
- Preheat your oven to 400 degrees Fahrenheit. Lightly grease a baking dish or line it with parchment paper.
- Pat the pork tenderloin dry with paper towels. Rub the entire surface with olive oil, then season evenly with salt and pepper.
- In a small bowl, whisk together the maple syrup, Dijon mustard, apple cider vinegar, and minced garlic to create the glaze.
- Place the seasoned pork tenderloin in the prepared baking dish. Brush half of the maple mustard glaze over the top and sides of the pork.
- Bake for 20 minutes.
- Remove the dish from the oven and brush the remaining glaze over the pork. Return to the oven.
- Continue baking for another 5 to 10 minutes, or until an instant-read thermometer inserted into the thickest part registers 145 degrees Fahrenheit.
- Remove the pork from the oven and let it rest on a cutting board for 5 to 10 minutes before slicing.
- Slice the pork into medallions and serve immediately.
