Ingredients
Scale
1 (15 ounce) can sweet peas, drained and rinsed
6 slices bacon, cooked crisp and crumbled
1/2 cup shredded sharp cheddar cheese
1/2 cup finely chopped red onion
1/2 cup mayonnaise
2 tablespoons apple cider vinegar
1 tablespoon granulated sugar
1 teaspoon Dijon mustard
1/4 teaspoon salt
1/4 teaspoon black pepper
Instructions
In a large bowl, combine the drained peas, crumbled bacon, shredded cheese, and chopped red onion. Set aside.
In a separate small bowl, whisk together the mayonnaise, apple cider vinegar, sugar, Dijon mustard, salt, and pepper until smooth. This creates your bacon onion pea salad dressing.
Pour the dressing over the pea mixture. Gently fold all ingredients together until the peas and other components are evenly coated.
Cover the bowl and refrigerate the salad for at least 2 hours before serving. This allows the flavors to blend.
Taste and adjust seasoning if needed before serving cold.
Notes
For a make ahead pea salad, you can prepare the dressing up to two days in advance and store it in the refrigerator.
If you prefer a tangier flavor, substitute white wine vinegar for the apple cider vinegar.
This cold pea salad recipe works well with frozen peas; thaw them completely and pat them dry before mixing.
