Make this refreshing ginger lemon cooler for a simple, non-alcoholic refreshment perfect for warm weather or as a digestive aid.

  • 1 cup water
  • 1 cup granulated sugar
  • 1/2 cup fresh ginger, sliced thinly
  • 1 cup fresh lemon juice (about 45 lemons)
  • 4 cups cold water or club soda
  • Ice cubes
  • Lemon slices and mint sprigs for garnish

Instructions

  1. Make the ginger simple syrup: Combine 1 cup water, sugar, and sliced ginger in a small saucepan. Bring to a simmer over medium heat, stirring until the sugar dissolves completely.
  2. Reduce heat to low and let the syrup steep for 15 minutes. Do not boil rapidly.
  3. Remove the syrup from the heat and let it cool completely. Strain the syrup through a fine-mesh sieve, discarding the ginger pieces. You now have ginger syrup.
  4. In a large pitcher, combine the fresh lemon juice and the cooled ginger syrup. Stir well.
  5. To serve, fill glasses with ice. Pour the lemon-ginger mixture into each glass, filling it about one-third full.
  6. Top the mixture with cold water or club soda for a sparkling beverage recipe. Adjust the amount of syrup or water to achieve your preferred balance of sweet, tart, and spicy.
  7. Garnish each ginger lemon cooler with a lemon slice and a sprig of mint.

Notes

  • For a healthier ginger tonic, substitute half the sugar in the syrup with honey or maple syrup.
  • If you prefer a stronger ginger flavor, steep the ginger for 20 minutes instead of 15.
  • This recipe makes a great base for mocktail inspiration; try adding a splash of pineapple juice.
