  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract

  • 2 medium apples (like Honeycrisp or Granny Smith), peeled, cored, and chopped
  • 1/4 cup powdered sugar (for dusting)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour an 8-inch square baking pan.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, and nutmeg. Set this dry mixture aside.
  3. In a large bowl, use an electric mixer to beat the softened butter and granulated sugar together until light and fluffy, about 3 minutes.
  4. Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the milk. Begin and end with the dry ingredients. Mix until just combined; do not overmix.
  6. Gently fold in the chopped apples using a spatula.
  7. Pour the batter into your prepared baking pan and spread evenly.
  8. Bake for 35 to 40 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the cake cool in the pan for 15 minutes before turning it out onto a wire rack to cool completely.
