Ingredients
Scale
2 large cucumbers, peeled and diced
2 medium ripe tomatoes, seeded and chopped
1 small red onion, thinly sliced
1/4 cup fresh parsley, chopped
For the Dressing:
3 tablespoons extra virgin olive oil
2 tablespoons white wine vinegar
1 teaspoon dried dill
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
Prepare the vegetables: Dice the cucumbers and tomatoes. Slice the red onion thinly. Place all prepared vegetables and the chopped parsley into a large mixing bowl.
Make the dressing: In a small bowl, whisk together the olive oil, white wine vinegar, dried dill, salt, and pepper until well combined.
Dress the salad: Pour the vinaigrette over the vegetables.
Toss gently to coat all ingredients evenly.
Serve immediately, or chill for 15 minutes to allow the flavors to meld.
Notes
For a crunchier texture, leave the cucumber skin on.
If you prefer a milder onion flavor, soak the sliced red onion in cold water for 10 minutes, then drain before adding to the salad.
This salad works well as a light salad lunch or a healthy salad side dish.
