Ingredients

  • 2 large cucumbers, peeled and diced
  • 2 medium ripe tomatoes, seeded and chopped
  • 1 small red onion, thinly sliced
  • 1/4 cup fresh parsley, chopped
  • For the Dressing:
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons white wine vinegar
  • 1 teaspoon dried dill
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Prepare the vegetables: Dice the cucumbers and tomatoes. Slice the red onion thinly. Place all prepared vegetables and the chopped parsley into a large mixing bowl.
  2. Make the dressing: In a small bowl, whisk together the olive oil, white wine vinegar, dried dill, salt, and pepper until well combined.
  3. Dress the salad: Pour the vinaigrette over the vegetables.
  4. Toss gently to coat all ingredients evenly.
  5. Serve immediately, or chill for 15 minutes to allow the flavors to meld.

Notes

  • For a crunchier texture, leave the cucumber skin on.
