  • 6 tablespoons unsalted butter, melted

  • 1 teaspoon vanilla extract

Instructions

  1. Prepare the crust: Mix the chocolate wafer crumbs and melted butter in a bowl until the mixture resembles wet sand. Press this mixture firmly and evenly into the bottom and up the sides of a 9-inch pie plate. Place the crust in the freezer while you prepare the filling.
  2. Chop the chocolate: Place the finely chopped bittersweet chocolate in a medium, heatproof bowl. Set aside.
  3. Heat the cream: In a small saucepan over medium heat, warm the heavy cream and sugar until small bubbles form around the edges. Do not let it boil. Remove from heat immediately.
  4. Make the ganache: Pour the hot cream mixture over the chopped chocolate. Let it sit undisturbed for 5 minutes to allow the chocolate to melt.
  5. Whisk until smooth: Add the vanilla extract and salt. Gently whisk the mixture starting from the center and working outward until the ganache is completely smooth, glossy, and uniform. This creates the best chocolate truffle filling.
  6. Fill the pie: Pour the warm ganache filling into the chilled chocolate wafer crust. Gently tap the pie plate on the counter a few times to release any air bubbles and level the surface.
