Easy Creamy Chicken Hashbrown Casserole

This is a simple, soul-satisfying chicken hashbrown casserole recipe. It uses cream of chicken soup and shredded cheese for a creamy texture, making it a perfect family-friendly dinner or potluck favorite.

  • 2 cups cooked, shredded chicken
  • 1 (32 ounce) bag frozen shredded hash browns, thawed
  • 1 (10.5 ounce) can condensed cream of chicken soup
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese, plus 1/2 cup for topping
  • 1/2 cup milk
  • 1/2 cup chopped onion
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon butter, melted (for topping)

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit. Grease a 9×13 inch baking dish.
  2. In a large bowl, combine the thawed hash browns, cooked chicken, cream of chicken soup, sour cream, 1 cup of cheddar cheese, milk, chopped onion, salt, and pepper. Mix until all ingredients are evenly coated.
  3. Spread the mixture evenly into the prepared baking dish.
  4. Sprinkle the remaining 1/2 cup of shredded cheddar cheese over the top of the casserole.
  5. Brush the melted butter lightly over the cheese topping.
  6. Bake for 45 to 55 minutes, or until the casserole is bubbly throughout and the cheese topping is golden brown.
  7. Let the casserole rest for 5 to 10 minutes before serving.

Notes

  • For a make ahead chicken casserole, assemble the entire dish, cover it, and refrigerate for up to 24 hours. Add 10 to 15 minutes to the baking time if baking directly from the refrigerator.
  • To make a Crockpot chicken hash brown casserole, combine all ingredients except the topping butter and bake on low for 6 to 8 hours or on high for 3 to 4 hours. Sprinkle cheese on top for the last 30 minutes.
  • Add 1 cup of frozen mixed vegetables (like peas and carrots) or 1 cup of drained canned green beans for extra flavor and nutrition.
  • If you want a spicier dish, add 1/2 teaspoon of garlic powder and a dash of hot sauce to the mixture.
