  • 1 pound ground turkey (93% lean recommended)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup cooked white rice or brown rice (for serving)
  • 1 cup shredded cabbage or coleslaw mix (optional, for serving)
  • 1 green onion, sliced (for garnish)
  • For the Bang Bang Sauce:
  • 1/2 cup mayonnaise
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon sriracha (adjust to your spice preference)
  • 1 teaspoon rice vinegar
  • 1/2 teaspoon garlic powder

Instructions

  1. Prepare the rice according to package directions.
  2. Make the Bang Bang Sauce: In a small bowl, whisk together the mayonnaise, sweet chili sauce, sriracha, rice vinegar, and garlic powder until smooth. Set aside.
  3. Cook the Turkey: Heat the olive oil in a large skillet over medium-high heat. Add the ground turkey, salt, and pepper. Break the meat apart with a spoon and cook until fully browned, about 6 to 8 minutes. Drain off any excess grease.
  4. Combine: Reduce the heat to low. Pour about half of the prepared Bang Bang Sauce over the cooked ground turkey in the skillet. Stir well to coat the meat evenly. Cook for 1 minute to heat the sauce through.
  5. Assemble the Bowls: Divide the cooked rice between two bowls. Top the rice with the sauced ground turkey mixture. Add shredded cabbage or coleslaw mix if using.
  6. Finish and Serve: Drizzle the remaining Bang Bang Sauce over the top of each bowl. Garnish with sliced green onions. Serve immediately.
