Make simple, zesty lemon chicken bites in your air fryer. This recipe delivers juicy, flavorful chicken pieces with a crisp exterior, perfect for a quick dinner or appetizer.

Ingredients

Scale
  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1/4 cup fresh lemon juice
  • 2 tablespoons olive oil
  • 1 tablespoon lemon zest
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon paprika

Instructions

  1. Place the cut chicken pieces in a medium bowl.
  2. In a small bowl, whisk together the lemon juice, olive oil, lemon zest, minced garlic, oregano, salt, pepper, and paprika to create the marinade.
  3. Pour the marinade over the chicken and toss to coat completely. Cover the bowl and refrigerate for at least 30 minutes, or up to 4 hours, to allow the lemon flavor to penetrate.
  4. Preheat your air fryer to 380°F (195°C) for 5 minutes.
  5. Remove the chicken from the marinade, letting excess liquid drip off. Do not overcrowd the air fryer basket; work in batches if necessary.
  6. Arrange the chicken pieces in a single layer in the air fryer basket.
  7. Air fry for 10 to 12 minutes, shaking the basket halfway through the cooking time, until the chicken is cooked through and golden brown.
  8. Check the internal temperature; it should reach 165°F (74°C). If needed, cook for 1-2 more minutes.
  9. Serve immediately as a quick air fryer dinner or easy air fryer appetizer.

Notes

  • For extra crispy chicken bites air fryer results, lightly spray the chicken pieces with cooking spray before the final 5 minutes of cooking.
  • If you want a stronger lemon garlic air fryer chicken flavor, add 1/2 teaspoon of garlic powder to the marinade.
  • This recipe works well for air fryer meal prep chicken; store cooled leftovers in an airtight container.
