  1. Prepare the bananas: Peel the bananas. Using a mandoline slicer or a very sharp knife, slice the bananas thinly and uniformly, aiming for about 1/16 to 1/8 inch thickness. Uniformity is key for even cooking.
  2. Soak the slices (optional but recommended): Place the banana slices in a bowl of cold water with 1 tablespoon of lemon juice for 10 minutes. This helps prevent browning. Drain the slices thoroughly and pat them completely dry with paper towels.
  3. Toss with oil and seasoning: In a clean bowl, gently toss the dry banana slices with the melted coconut oil until lightly coated. If using, sprinkle with cinnamon and salt, tossing again to distribute evenly.
  4. Preheat the air fryer: Set your air fryer to 300 degrees Fahrenheit (150 degrees Celsius). This lower temperature is important for drying them out instead of burning them.
  5. Arrange in the basket: Place the seasoned banana slices in a single layer inside the air fryer basket. Do not overcrowd the basket; work in batches if necessary to maintain crispness.
  6. Air fry in stages: Cook for 10 minutes. Carefully pull out the basket and shake it gently to flip the chips. Return to the air fryer and cook for another 5 to 10 minutes, checking frequently after the 5-minute mark.
  7. Check for crispness: The chips are done when they are firm and lightly golden brown. If they still feel soft, continue cooking in 2-minute intervals until crisp. Total cooking time usually ranges from 15 to 20 minutes depending on the thickness and air fryer model.
  8. Cool completely: Remove the chips from the air fryer immediately and spread them in a single layer on a wire rack to cool completely. They will crisp up significantly as they cool down.
