  • 1 pound Italian sausage (sweet or hot), casings removed
  • 12 ounces short pasta (like penne or rotini)
  • 1 tablespoon olive oil
  • 1 small yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese, plus more for serving
  • 2 cups fresh spinach
  • Salt and black pepper to taste

Instructions

  1. Cook the pasta according to package directions. Reserve about 1/2 cup of the starchy pasta water before draining. Set the pasta aside.
  2. While the pasta cooks, heat the olive oil in a large skillet over medium heat. Add the Italian sausage and break it up with a spoon. Cook until browned, about 5 to 7 minutes. Drain off excess grease.
  3. Add the chopped onion to the skillet with the sausage and cook until softened, about 3 minutes.
  4. Stir in the minced garlic and cook for 1 minute until fragrant.
  5. Pour in the diced tomatoes (with their juice) and chicken broth. Bring the mixture to a simmer and cook for 3 minutes, allowing the flavors to combine.
  6. Reduce the heat to low. Stir in the heavy cream and Parmesan cheese until the sauce is smooth.
  7. Add the fresh spinach to the sauce and stir until it wilts, about 1 minute.
  8. Add the cooked and drained pasta to the skillet. Toss everything together until the pasta is coated. If the sauce seems too thick, add a splash of the reserved pasta water until you reach your desired consistency.
  9. Season with salt and pepper to taste. Serve immediately with extra Parmesan cheese.
