  • 2 cups grated zucchini, squeezed dry
  • 1/2 cup all-purpose flour
  • 1/4 cup grated Parmesan cheese
  • 1 large egg, beaten
  • 2 green onions, thinly sliced
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 2 tablespoons olive oil, for frying

Instructions

  1. Grate the zucchini and place it in a clean kitchen towel or cheesecloth. Squeeze out as much moisture as possible. This step is crucial for crispy fritters.
  2. In a medium bowl, combine the squeezed zucchini, flour, Parmesan cheese, beaten egg, green onions, salt, and pepper. Mix until just combined.
  3. Heat the olive oil in a large skillet over medium-high heat.
  4. Drop spoonfuls of the zucchini mixture into the hot skillet, flattening them slightly with the back of the spoon. Do not overcrowd the pan.
  5. Cook for 3-4 minutes per side, until golden brown and crispy.
  6. Remove fritters from the skillet and drain on paper towels.
