Ingredients
Scale
2 cups grated zucchini, squeezed dry
1/2 cup all-purpose flour
1/4 cup grated Parmesan cheese
1 large egg, beaten
2 green onions, thinly sliced
1/4 teaspoon salt
1/8 teaspoon black pepper
2 tablespoons olive oil, for frying
Instructions
Grate the zucchini and place it in a clean kitchen towel or cheesecloth. Squeeze out as much moisture as possible. This step is crucial for crispy fritters.
In a medium bowl, combine the squeezed zucchini, flour, Parmesan cheese, beaten egg, green onions, salt, and pepper. Mix until just combined.
Heat the olive oil in a large skillet over medium-high heat.
Drop spoonfuls of the zucchini mixture into the hot skillet, flattening them slightly with the back of the spoon. Do not overcrowd the pan.
Cook for 3-4 minutes per side, until golden brown and crispy.
Remove fritters from the skillet and drain on paper towels.
Serve hot with your favorite dipping sauce.
Notes
For air fryer instructions, preheat your air fryer to 400°F (200°C). Lightly spray the fritters with cooking spray and cook for 10-12 minutes, flipping halfway through, until golden and crispy.
Dipping sauce ideas: Greek yogurt with dill, sriracha mayo, or a simple lemon aioli.
You can add other grated vegetables like carrots or corn to the mixture.
