  • 2 large flour tortillas
  • 1 tbsp olive oil
  • 1/2 cup sliced bell peppers (any color)
  • 1/2 cup sliced onion
  • 1/2 cup canned black beans, rinsed and drained
  • 1/4 cup shredded cheddar cheese
  • 1/4 tsp chili powder
  • 1/4 tsp cumin
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add bell peppers and onion to the skillet. Cook until softened, about 5-7 minutes.
  3. Stir in black beans, chili powder, cumin, salt, and pepper. Cook for another 2-3 minutes until heated through.
