Ingredients
Scale
3 very ripe bananas, mashed
1/3 cup melted coconut oil or neutral vegetable oil
1/2 cup packed light brown sugar
1/4 cup unsweetened plant milk (soy, almond, or oat)
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1/2 cup vegan chocolate chips or chopped walnuts (optional)
Instructions
Preheat your oven to 350°F (175°C). Grease and flour a standard 9×5 inch loaf pan, or line it with parchment paper.
In a large bowl, mash the ripe bananas until mostly smooth. You can leave a few small lumps for texture.
Add the melted oil, brown sugar, plant milk, and vanilla extract to the mashed bananas. Whisk these wet ingredients together until they are well combined.
In a separate, smaller bowl, whisk together the flour, baking soda, cinnamon, and salt.
Pour the dry ingredients into the wet ingredients. Use a spatula to gently fold the mixture together until just combined. Do not overmix; a few streaks of flour are fine.
If using, gently fold in the chocolate chips or walnuts.
Pour the batter into your prepared loaf pan and spread it evenly.
Bake for 50 to 60 minutes, or until a toothpick inserted into the center comes out clean or with moist crumbs attached.
Let the bread cool in the pan for 10 minutes before carefully transferring it to a wire rack to cool completely before slicing.
Notes
Using very ripe, spotty bananas is key for the best flavor and moisture in this easy vegan banana bread.
If you want a gluten-free option, substitute the all-purpose flour with a 1:1 gluten-free baking blend.
For an extra moist texture, you can substitute the oil with 1/3 cup of unsweetened applesauce.
