A quick and easy one-pan skillet meal that deconstructs classic stuffed peppers for a stress-free weeknight dinner.

  • 1 tablespoon olive oil
  • 1 pound lean ground beef
  • 1 medium onion, chopped
  • 2 bell peppers (any color), chopped
  • 2 cloves garlic, minced
  • 1 (15 ounce) can diced tomatoes, undrained
  • 1 cup cooked rice (white or brown)
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup shredded mozzarella cheese (optional)

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook, breaking it up with a spoon, until browned. Drain off any excess grease.
  2. Add chopped onion and bell peppers to the skillet. Cook until softened, about 5-7 minutes.
  3. Stir in minced garlic and cook for 1 minute more until fragrant.
  4. Pour in the diced tomatoes (with their juice) and add the cooked rice, Italian seasoning, salt, and pepper. Stir to combine.
  5. Bring the mixture to a simmer, then reduce heat to low, cover, and cook for 10 minutes, or until heated through and flavors have melded.
  6. If desired, sprinkle mozzarella cheese over the top during the last minute of cooking and cover to melt.
  7. Serve hot.
