1 3/4 cups crushed Oreo cookies (about 25 cookies)
1/2 cup unsalted butter, melted
1/2 gallon softened vanilla ice cream
1 cup softened chocolate ice cream (or coffee ice cream for a Billy Miner style)
1/2 cup hot fudge sauce, warmed
1/4 cup caramel sauce (optional)
1 cup heavy whipping cream
2 tablespoons powdered sugar
1/2 teaspoon vanilla extract
1/4 cup sliced almonds or mini chocolate chips for topping
Instructions
Prepare the crust: Mix the crushed Oreo cookies and melted butter in a bowl until the crumbs are evenly moistened. Press this mixture firmly into the bottom and up the sides of a 9-inch pie plate. Freeze the crust for at least 30 minutes while you prepare the filling.
Soften the ice creams: Allow both the vanilla and chocolate ice creams to soften slightly at room temperature for about 10 to 15 minutes so they are easy to spread.
Layer the filling: Remove the crust from the freezer. Spread the softened vanilla ice cream evenly over the bottom of the crust. Drizzle half of the hot fudge sauce and half of the caramel sauce (if using) over the vanilla layer.
Add the second layer: Gently spread the softened chocolate ice cream over the fudge and caramel layer. If you want a swirl effect, drizzle the remaining fudge and caramel over the top and use a knife to gently swirl the layers together.
Freeze: Cover the pie loosely with plastic wrap and freeze for at least 4 hours, or until completely firm. This is a great make-ahead dessert.
Make the topping: Just before serving, beat the heavy whipping cream, powdered sugar, and vanilla extract in a bowl until stiff peaks form.
Serve: Spread or pipe the whipped cream over the frozen pie. Sprinkle with sliced almonds or mini chocolate chips. Slice the ultimate ice cream pie with a sharp, hot knife and serve immediately.
Notes
For a quick crust, you can use pre-made graham cracker crusts instead of Oreos.
If you are making this for a party, assemble the entire pie the day before and keep it frozen. Add the whipped cream topping just before serving.
To easily remove the pie from the plate for slicing, you can line the pie dish with plastic wrap before adding the crust.
