  • 12 cups Chex cereal (mixture of Rice and Corn works well)
  • 1 cup (2 sticks) unsalted butter
  • 1 cup packed light brown sugar
  • 1/4 cup light corn syrup
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup toffee bits (optional, for extra flavor)
  • 1 cup chopped pecans or walnuts (optional)

Instructions

  1. Preheat your oven to 250F. Line two large baking sheets with parchment paper.
  2. In a large bowl, combine the Chex cereal and any optional nuts. Set aside.
  3. In a medium saucepan, combine the butter, brown sugar, and corn syrup. Heat over medium heat, stirring constantly until the butter melts and the mixture comes to a full boil. Let it boil for exactly 1 minute without stirring.
  4. Remove the saucepan from the heat. Quickly stir in the vanilla extract, baking soda, and salt. The mixture will foam up slightly.
  5. Pour the hot toffee mixture evenly over the cereal mixture in the large bowl. Gently stir until the cereal is completely coated. If using toffee bits, stir them in now.
  6. Spread the coated cereal mixture in a single layer onto the prepared baking sheets.
  7. Bake for 45 minutes, stirring every 15 minutes to prevent burning and ensure even coating.
  8. Remove from the oven and let the mix cool completely on the baking sheets. The toffee coating will harden as it cools, creating that perfect crunch.
  9. Once cool, break the mix into pieces and store it in an airtight container.

  • For the best sweet and salty balance, use salted butter in the toffee mixture.
