1 pound ground beef
1 onion, chopped
1 can (10.5 ounces) condensed cream of mushroom soup
1/2 cup milk
1 teaspoon salt
1/4 teaspoon black pepper
1 bag (16 ounces) frozen tater tots
1 cup shredded cheddar cheese
Instructions
Preheat your oven to 375°F (190°C).
In a skillet, brown the ground beef and chopped onion over medium heat. Drain off any excess grease.
Stir in the condensed cream of mushroom soup, milk, salt, and pepper. Cook for 2 minutes, stirring occasionally.
Pour the beef mixture into a 9×13 inch baking dish.
Arrange the frozen tater tots evenly over the beef mixture.
Sprinkle the shredded cheddar cheese over the tater tots.
Bake for 25-30 minutes, or until the tater tots are golden brown and crispy, and the cheese is melted and bubbly.
Let stand for 5 minutes before serving.
Notes
For a make-ahead option, assemble the casserole but do not bake. Cover and refrigerate for up to 24 hours. Add an extra 5-10 minutes to the baking time if baking from chilled.
You can add a layer of canned green beans or corn over the beef mixture before adding the tater tots for extra vegetables.
This casserole freezes well. Let it cool completely, then wrap tightly and freeze for up to 3 months. Thaw overnight in the refrigerator and bake as directed.
