  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 2 cups sweet potato, peeled and diced into 1/2-inch pieces
  • 1 small onion, chopped
  • 1 packet (1 ounce) taco seasoning
  • 1 can (15 ounces) black beans, rinsed and drained
  • 1 cup frozen corn
  • 1/2 cup water
  • 1/2 cup shredded cheddar cheese (optional)

Instructions

  1. Heat the olive oil in a large skillet over medium-high heat. Add the ground beef and cook, breaking it apart with a spoon, until browned. Drain off any excess grease.
  2. Add the diced sweet potato and chopped onion to the skillet with the ground beef. Cook for 5 to 7 minutes, stirring occasionally, until the sweet potatoes begin to soften slightly.
  3. Stir in the taco seasoning, black beans, frozen corn, and water. Bring the mixture to a simmer.
  4. Reduce the heat to medium-low, cover the skillet, and cook for 10 to 12 minutes, or until the sweet potatoes are tender when pierced with a fork. Stir halfway through cooking.
  5. Remove the lid. If using cheese, sprinkle the shredded cheddar cheese over the top. Cover for 2 minutes until the cheese melts.
  6. Serve this easy one pan dinner immediately.

Notes

  • For a ground turkey skillet option, substitute ground turkey for the ground beef.
  • If you prefer a less spicy flavor, reduce the amount of taco seasoning used.
