I am so glad you are here. You can make this incredibly moist banana bread using only the sweetness from very ripe bananas. This recipe is simple and perfect for a healthy snack or breakfast.

Ingredients

Scale
  • 3 large, very ripe bananas, mashed
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 3/4 cups all-purpose flour (or use a 1:1 gluten-free blend for a gluten free sugar free banana bread option)
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 cup unsweetened applesauce (optional, for extra moisture)
  • 1/2 cup monk fruit/erythritol blend (optional, only if bananas are not very ripe, for a low carb banana bread alternative)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
  2. In a large bowl, mash the ripe bananas until mostly smooth.
  3. Stir the melted butter into the mashed bananas.
  4. Whisk in the eggs and vanilla extract until combined.
  5. In a separate medium bowl, whisk together the flour, baking soda, salt, and cinnamon. If using, add the optional sweetener here.
  6. Gradually add the dry ingredients to the wet ingredients, mixing only until just combined. Do not overmix. If using, fold in the applesauce now.
  7. Pour the batter into the prepared loaf pan.
  8. Bake for 50 to 60 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Notes

  • The riper your bananas are (the more brown spots they have), the sweeter your bread will be, reducing the need for any added sweetener.
  • This recipe works well as a diabetic friendly banana bread when you omit the optional sweetener.
  • For a wholesome snack bread idea, you can fold in 1/2 cup of chopped walnuts or pecans during the last mixing step.
