  • 4 cups fresh strawberries, hulled and crushed
  • 4 cups granulated sugar
  • 1 tablespoon fresh lemon juice

Instructions

  1. Prepare your jars: Wash and dry four half-pint freezer-safe jars with lids. Set them aside.
  2. Crush the strawberries: Place the hulled strawberries in a large bowl. Use a potato masher or the back of a spoon to crush them until you reach your desired consistency. Some people prefer chunky, others prefer smoother.
  3. Mix sugar: Add the granulated sugar to the crushed strawberries. Stir well until the sugar is completely dissolved. This usually takes about 5 minutes of stirring.
  4. Add lemon juice: Stir in the fresh lemon juice. The acid helps brighten the flavor.
  5. Rest the mixture: Let the strawberry and sugar mixture sit at room temperature for 20 minutes, stirring occasionally. This allows the fruit to release more juice and the sugar to fully dissolve.
  6. Fill jars: Spoon the jam mixture into your prepared jars, leaving about 1/2 inch of headspace at the top of each jar. Wipe the rims clean.
  7. Seal and freeze: Place the lids on the jars and screw them on until just fingertip tight. Let the jars cool completely on the counter, then transfer them to the freezer. This jam is ready to eat once frozen solid.

Notes

  • This no pectin jam method yields a softer set, similar to a thick sauce. If you prefer a very firm jam, you must use commercial pectin, which changes the ingredient list and steps.
  • For the best flavor, use ripe, fresh strawberries. If you must use frozen strawberries, thaw them completely first, but drain off any excess liquid before crushing.
  • Label your jars clearly with the contents and the date. This freezer friendly spread lasts up to one year in the freezer.
  • If you want to use this as a topping immediately without freezing, let it sit for 30 minutes after mixing the sugar, then serve.
