Make these bright pink, soft, and chewy strawberry cake mix cookies with just four simple ingredients. They bake up with perfect crinkled tops and deliver intense strawberry flavor, making them a fast dessert for parties or a quick weeknight treat.

  • 1 box (15.25 oz) strawberry cake mix
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1/2 cup powdered sugar (for rolling)

Instructions

  1. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a medium bowl, combine the entire box of strawberry cake mix, the two eggs, and the vegetable oil. Mix with a hand mixer or a sturdy spoon until a soft dough forms. Do not overmix.
  3. Place the 1/2 cup of powdered sugar into a shallow dish.
  4. Scoop the dough into balls, about 1 tablespoon each. Roll each ball completely in the powdered sugar until fully coated.
  5. Place the coated dough balls onto the prepared baking sheets, leaving about 2 inches between each one.
  6. Bake for 9 to 11 minutes. The cookies will look slightly puffy and the edges will be set, but the centers should still look soft.
  7. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely. The crinkles will set as they cool.

Notes

  • For an extra burst of flavor and texture, add 1/2 cup of white chocolate chips or mini chocolate chips to the dough mixture.
  • If you prefer a thicker, crinkled top, chill the dough for 30 minutes before rolling in powdered sugar and baking.
