Hi, I’m Alex, and I’m so glad you’re here. I believe incredible food doesn’t have to be complicated. These fudgy strawberry brownies are a simple, delicious twist on a classic, perfect for bringing people together. We focus on achieving a moist texture and bright berry flavor.

Ingredients

Scale
  • 1 cup (2 sticks) unsalted butter, melted
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/4 teaspoon salt
  • 1 cup fresh strawberries, diced
  • 1/2 cup chocolate chips (optional)
  • For the Glaze: 1 cup powdered sugar, 2 tablespoons milk, 1/2 teaspoon strawberry extract (or pink food coloring for color)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line a 9×9 inch baking pan with parchment paper, leaving an overhang for easy removal.
  2. In a large bowl, whisk together the melted butter and granulated sugar until combined.
  3. Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, cocoa powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  6. Gently fold in the diced fresh strawberries and the optional chocolate chips.
  7. Spread the batter evenly into the prepared baking pan.
  8. Bake for 25 to 30 minutes, or until a toothpick inserted near the center comes out with moist crumbs attached, not wet batter. This helps keep your brownies fudgy.
  9. Let the brownies cool completely in the pan on a wire rack.
  10. Prepare the glaze: Whisk together the powdered sugar, milk, and strawberry extract (or coloring) until smooth. Add more milk, a drop at a time, if the glaze is too thick.
  11. Once the brownies are completely cool, drizzle or spread the glaze evenly over the top. Let the glaze set before cutting into squares.

Notes

  • For an even fudgier texture, slightly reduce the baking time. Check at 25 minutes.
  • You can substitute fresh strawberries with 3/4 cup of good quality strawberry preserves mixed into the batter for a different flavor profile.
  • If you want to make chocolate strawberry brownies, fold in 1/2 cup of semi-sweet chocolate chips with the strawberries.
