Make this incredibly moist and flavorful meatloaf using Stove Top stuffing mix instead of breadcrumbs. It is a simple, quick prep meal perfect for a weeknight dinner.

  • 2 lbs ground beef (or ground turkey for a lighter option)
  • 1 box (6 oz) Stove Top Stuffing Mix (Savory or Turkey flavor)
  • 1 large egg
  • 1/2 cup milk
  • 1/4 cup ketchup or tomato sauce
  • 1 small onion, finely minced
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional Glaze: 1/2 cup ketchup, 2 tablespoons brown sugar, 1 teaspoon apple cider vinegar

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×5 inch loaf pan or prepare a baking sheet for free-form loaf.
  2. In a large bowl, combine the minced onion, egg, milk, 1/4 cup ketchup, Worcestershire sauce, salt, and pepper. Mix until just combined.
  3. Add the entire box of Stove Top Stuffing Mix to the wet ingredients. Do not prepare the stuffing separately; add the dry mix directly.
  4. Add the ground beef to the bowl. Use your hands to gently mix all ingredients until they are evenly incorporated. Do not overmix, as this can make the meatloaf tough.
  5. Shape the mixture into a loaf shape on your prepared pan or place it into the loaf pan.
  6. If using the optional glaze, whisk together the glaze ingredients and spread evenly over the top of the meatloaf.
  7. Bake for 50 to 60 minutes, or until the internal temperature reaches 160 degrees Fahrenheit for beef or 165 degrees Fahrenheit for turkey.
  8. Remove the meatloaf from the oven and let it rest for 10 minutes before slicing. This helps keep your meatloaf tender.

Notes

  • For an extra savory flavor, use the Turkey flavor Stove Top Stuffing Mix even when using ground beef.
  • If you prefer a free-form loaf, place the mixture on a foil-lined baking sheet. This allows excess fat to drip away.
  • To make a quick brown gravy, whisk 1 tablespoon of cornstarch into 1 cup of beef broth, then simmer until thickened. Pour over slices when serving.
  • This recipe works well for making Meatloaf Cupcakes; press the mixture into a muffin tin and bake for about 25 minutes.
