Spinach Black Bean Folded Wraps

Crispy folded tortilla wraps filled with spinach, black beans, and cheese. Perfect for a quick lunch or meal prep.

Ingredients

  • 8 medium flour tortillas
  • 1 tablespoon olive oil
  • 1 cup chopped fresh spinach
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup salsa
  • 1/4 teaspoon cumin
  • 1/4 teaspoon chili powder

Instructions

  1. In a skillet, heat olive oil over medium heat. Add spinach and cook until wilted, about 2 minutes.
  2. Stir in black beans, cheddar cheese, salsa, cumin, and chili powder. Cook until cheese is melted and beans are heated through, about 3-5 minutes.
  3. Lay out tortillas. Spoon the spinach and black bean mixture onto one half of each tortilla.
  4. Fold the other half of the tortilla over the filling to create a half-moon shape.
  5. Wipe the skillet clean. Cook the folded wraps in the skillet over medium heat for 3-4 minutes per side, or until golden brown and crispy.
  6. Alternatively, cook in an air fryer at 375°F (190°C) for 5-7 minutes, flipping halfway through, until golden and crispy.

Notes

  • These wraps are great for meal prep and can be frozen for later. Reheat in a skillet or air fryer for best results.
  • Feel free to add other vegetables like corn or diced bell peppers.
  • For a spicier kick, add a pinch of cayenne pepper or some chopped jalapeños.
