1 pound pasta
1 tablespoon olive oil
1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
1 (14 ounce) can artichoke hearts, drained and chopped
3 cloves garlic, minced
1 1/2 cups heavy cream
1 cup grated Parmesan cheese
1/2 cup shredded mozzarella cheese
1/4 cup chopped fresh parsley, for garnish
Instructions
Cook pasta according to package directions. Drain, reserving about 1 cup of pasta water.
While pasta is cooking, heat olive oil in a large skillet over medium-high heat. Add chicken and season with salt, pepper, garlic powder, onion powder, and red pepper flakes. Cook until browned and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
Add minced garlic to the skillet and cook until fragrant, about 1 minute.
Stir in the thawed spinach and chopped artichoke hearts. Cook for 2-3 minutes until heated through.
Pour in the heavy cream and bring to a simmer. Reduce heat to low and stir in Parmesan cheese and mozzarella cheese until melted and smooth.
Return the cooked chicken to the skillet. Add the cooked pasta and toss to combine. If the sauce is too thick, add a little reserved pasta water until desired consistency is reached.
Serve immediately, garnished with fresh parsley.
Notes
For a vegetarian option, omit the chicken and add an extra can of drained and rinsed cannellini beans or chickpeas.
