  • 2 lbs boneless, skinless chicken breasts or thighs
  • 1 (10.5 ounce) can cream of chicken soup
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 4 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: 1 cup cooked pasta or steamed broccoli for serving

Instructions

  1. Place the chicken breasts or thighs into the basin of your slow cooker.
  2. In a separate bowl, whisk together the cream of chicken soup, chicken broth, heavy cream, Parmesan cheese, minced garlic, Italian seasoning, salt, and pepper until smooth.
  3. Pour the sauce mixture evenly over the chicken in the slow cooker.
  4. Cover and cook on LOW for 4 to 6 hours or on HIGH for 2 to 3 hours, until the chicken is tender and cooked through.
  5. Remove the chicken from the slow cooker and shred it using two forks. Return the shredded chicken to the sauce and stir to coat.
  6. If serving with pasta or broccoli, stir them into the sauce now to heat through.
