Slow Cooker French Dip Sandwiches

Make tender, shredded beef and rich au jus for delicious French dip sandwiches. This slow cooker recipe is perfect for an easy meal or game day.

  • 34 pound chuck roast
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 1 cup beef broth
  • 1/2 cup Worcestershire sauce
  • 1 tablespoon soy sauce
  • 1 bay leaf
  • 68 hoagie rolls
  • 1 tablespoon butter, softened
  • 1 cup shredded provolone or Swiss cheese
  • Optional: Au jus for dipping

Instructions

  1. Place the chuck roast in your slow cooker.
  2. In a small bowl, mix together salt, pepper, garlic powder, onion powder, and Italian seasoning. Sprinkle the mixture evenly over the roast.
  3. Pour beef broth, Worcestershire sauce, and soy sauce over the roast. Add the bay leaf.
  4. Cover and cook on low for 8-10 hours or on high for 4-5 hours, until the beef is tender and shreds easily.
  5. Remove the roast from the slow cooker and shred it with two forks. Skim any excess fat from the cooking liquid.
  6. Slice the hoagie rolls in half lengthwise. Spread softened butter on the cut sides.
  7. Place the rolls, cut-side up, on a baking sheet. Top with shredded beef and cheese.
  8. Broil for 1-2 minutes, or until the cheese is melted and bubbly.
  9. Serve the sandwiches with the reserved au jus for dipping.

Notes

  • For extra flavor, you can sear the chuck roast before placing it in the slow cooker.
  • You can make the au jus ahead of time and reheat it.
  • Other cheese options include mozzarella or Gruyere.
  • Serve with a side of french fries or a simple salad.
