- 2 lbs beef chuck roast, cut into 1-inch cubes
- 1.5 lbs baby potatoes, halved or quartered
- 1 cup beef broth
- 1/2 cup unsalted butter, melted
- 4 cloves garlic, minced
- 1 teaspoon dried rosemary
- 1 teaspoon dried thyme
- Salt and black pepper to taste
- Optional: Fresh parsley, chopped, for garnish
- Place the beef cubes in the bottom of your slow cooker.
