Ingredients

  • 2 lbs beef chuck roast, cut into 1-inch cubes
  • 1.5 lbs baby potatoes, halved or quartered
  • 1 cup beef broth
  • 1/2 cup unsalted butter, melted
  • 4 cloves garlic, minced
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • Salt and black pepper to taste
  • Optional: Fresh parsley, chopped, for garnish

Instructions

  1. Place the beef cubes in the bottom of your slow cooker.
  2. Add the potatoes around the beef.
  3. In a small bowl, whisk together the beef broth, melted butter, minced garlic, rosemary, thyme, salt, and pepper.
  4. Pour the liquid mixture over the beef and potatoes.
  5. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the beef is tender and the potatoes are cooked through.
  6. Serve hot, garnished with fresh parsley if desired.

Notes

  • For best results, use beef chuck roast as it becomes very tender when slow-cooked.
