1/2 cup soy sauce
1/4 cup olive oil
1/4 cup lime juice
3 cloves garlic, minced
1 tbsp Worcestershire sauce
1 tsp black pepper
1 tsp onion powder
1/2 tsp red pepper flakes (optional)
Instructions
In a bowl, whisk together soy sauce, olive oil, lime juice, minced garlic, Worcestershire sauce, black pepper, onion powder, and red pepper flakes (if using).
Place the skirt steak in a resealable bag or shallow dish.
Pour the marinade over the steak, ensuring it is fully coated.
Marinate in the refrigerator for at least 30 minutes, or up to 4 hours. For best flavor, marinate for 2 hours.
Preheat your grill to high heat (around 450-500°F or 230-260°C).
Remove the steak from the marinade, discarding the excess marinade. Pat the steak dry with paper towels.
Grill the skirt steak for 3-5 minutes per side for medium-rare, depending on thickness. Aim for a nice char.
