Create a tender and flavorful skirt steak with this easy marinade. Perfect for weeknight grilling or BBQs, this recipe delivers juicy, char-grilled perfection.

  • 1.5 lbs skirt steak
  • 1/2 cup soy sauce
  • 1/4 cup olive oil
  • 1/4 cup lime juice
  • 3 cloves garlic, minced
  • 1 tbsp Worcestershire sauce
  • 1 tsp black pepper
  • 1 tsp onion powder
  • 1/2 tsp red pepper flakes (optional)

Instructions

  1. In a bowl, whisk together soy sauce, olive oil, lime juice, minced garlic, Worcestershire sauce, black pepper, onion powder, and red pepper flakes (if using).
  2. Place the skirt steak in a resealable bag or shallow dish.
  3. Pour the marinade over the steak, ensuring it is fully coated.
  4. Marinate in the refrigerator for at least 30 minutes, or up to 4 hours. For best flavor, marinate for 2 hours.
  5. Preheat your grill to high heat (around 450-500°F or 230-260°C).
  6. Remove the steak from the marinade, discarding the excess marinade. Pat the steak dry with paper towels.
  7. Grill the skirt steak for 3-5 minutes per side for medium-rare, depending on thickness. Aim for a nice char.
  8. Let the steak rest for 5-10 minutes before slicing against the grain.
