1 pound ground beef
1 medium onion, chopped
2 cloves garlic, minced
1 (24 ounce) jar marinara sauce
1 (14.5 ounce) can diced tomatoes, undrained
1 cup water
1 teaspoon dried Italian seasoning
1/2 teaspoon salt
1/4 teaspoon black pepper
8 ounces lasagna noodles, broken into 2-inch pieces
1 (15 ounce) container ricotta cheese
1 large egg
1/4 cup grated Parmesan cheese, plus more for topping
2 cups shredded mozzarella cheese
Instructions
Heat olive oil in a large, deep skillet (10 or 12-inch) over medium heat. Add ground beef and onion. Cook until the beef is browned and the onion is soft, about 5 to 7 minutes. Drain any excess grease.
Stir in minced garlic and cook for 1 minute until fragrant.
Pour in marinara sauce, diced tomatoes (with liquid), water, Italian seasoning, salt, and pepper. Bring the mixture to a simmer.
Stir in the broken lasagna noodles, ensuring they are mostly submerged in the sauce.
Cover the skillet, reduce heat to low, and cook for 15 to 20 minutes, stirring occasionally to prevent sticking, until the noodles are tender.
While the noodles cook, mix the ricotta cheese, egg, and 1/4 cup Parmesan cheese in a small bowl.
Once the noodles are tender, remove the skillet from the heat. Drop spoonfuls of the ricotta mixture over the top of the sauce and noodles.
Sprinkle the mozzarella cheese evenly over the ricotta dollops.
Cover the skillet again and let it sit off the heat for 5 minutes to allow the cheese to melt completely.
Serve immediately, topping each portion with extra Parmesan cheese.
