Ingredients

Scale
  • 1 pound large shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup fresh lime juice
  • 2 tablespoons chopped fresh cilantro
  • 12 small corn or flour tortillas
  • For the Creamy Slaw:
  • 2 cups shredded cabbage (green or mix)
  • 1/4 cup mayonnaise
  • 1 tablespoon lime juice
  • 1 teaspoon sugar
  • Pinch of salt and pepper
  • Optional Toppings: Sliced avocado, extra cilantro, lime wedges

Instructions

  1. Prepare the shrimp seasoning: In a bowl, toss the shrimp with olive oil, chili powder, cumin, salt, and pepper. Set aside for 5 minutes.
  2. Make the slaw dressing: In a separate small bowl, whisk together the mayonnaise, 1 tablespoon lime juice, sugar, salt, and pepper until smooth.
  3. Combine the slaw: Add the shredded cabbage to the dressing and toss to coat evenly. Set aside.
  4. Cook the shrimp: Heat a large skillet over medium-high heat. Add the seasoned shrimp in a single layer. Cook for 2-3 minutes per side until pink and opaque.
  5. Finish the shrimp: Remove the skillet from the heat. Immediately toss the cooked shrimp with the remaining 1/4 cup lime juice and 2 tablespoons of chopped cilantro.
  6. Warm the tortillas: Warm the tortillas according to package directions (in a dry skillet or microwave).
  7. Assemble the tacos: Place a portion of the shrimp onto each warm tortilla. Top generously with the creamy cabbage slaw. Add any optional toppings you prefer. Serve immediately.

Notes

  • You can grill the shrimp instead of pan-searing for a smoky flavor.
  • For a spicier sauce, add a dash of hot sauce to the creamy slaw dressing.
  • This recipe is excellent for making ahead; prepare the slaw and shrimp seasoning separately and combine just before cooking.
