Ingredients
Scale
1 pound large shrimp, peeled and deveined
1 tablespoon olive oil
1 teaspoon chili powder
1/2 teaspoon cumin
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup fresh lime juice
2 tablespoons chopped fresh cilantro
12 small corn or flour tortillas
For the Creamy Slaw:
2 cups shredded cabbage (green or mix)
1/4 cup mayonnaise
1 tablespoon lime juice
1 teaspoon sugar
Pinch of salt and pepper
Optional Toppings: Sliced avocado, extra cilantro, lime wedges
Instructions
Prepare the shrimp seasoning: In a bowl, toss the shrimp with olive oil, chili powder, cumin, salt, and pepper. Set aside for 5 minutes.
Make the slaw dressing: In a separate small bowl, whisk together the mayonnaise, 1 tablespoon lime juice, sugar, salt, and pepper until smooth.
Combine the slaw: Add the shredded cabbage to the dressing and toss to coat evenly. Set aside.
Cook the shrimp: Heat a large skillet over medium-high heat. Add the seasoned shrimp in a single layer. Cook for 2-3 minutes per side until pink and opaque.
Finish the shrimp: Remove the skillet from the heat. Immediately toss the cooked shrimp with the remaining 1/4 cup lime juice and 2 tablespoons of chopped cilantro.
Warm the tortillas: Warm the tortillas according to package directions (in a dry skillet or microwave).
Assemble the tacos: Place a portion of the shrimp onto each warm tortilla. Top generously with the creamy cabbage slaw. Add any optional toppings you prefer. Serve immediately.
Notes
You can grill the shrimp instead of pan-searing for a smoky flavor.
For a spicier sauce, add a dash of hot sauce to the creamy slaw dressing.
This recipe is excellent for making ahead; prepare the slaw and shrimp seasoning separately and combine just before cooking.
