  • 8 breakfast sausages
  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 large egg
  • 3/4 cup milk
  • 2 tablespoons melted butter
  • 1/4 cup maple syrup, for serving
  • Vegetable oil, for frying

Instructions

  1. Preheat your oven to 200°F (95°C) to keep the sausages warm. Cook the breakfast sausages according to package directions. Place the cooked sausages on a baking sheet and keep them warm in the oven.
  2. In a medium bowl, whisk together the flour, sugar, baking powder, and salt.
  3. In a separate bowl, whisk together the egg, milk, and melted butter until well combined.
  4. Pour the wet ingredients into the dry ingredients and whisk until just combined. Do not overmix; a few lumps are okay.
  5. Pour about 1 inch of vegetable oil into a deep skillet or Dutch oven. Heat the oil over medium-high heat until it reaches 350°F (175°C).
  6. Dip each cooked sausage into the pancake batter, ensuring it is fully coated.
  7. Carefully place the battered sausages into the hot oil, being careful not to overcrowd the skillet. Fry for 2-3 minutes per side, until golden brown and cooked through.
  8. Remove the sausage dipped pancakes from the oil with a slotted spoon and place them on a wire rack to drain any excess oil.
  9. Serve immediately with maple syrup for dipping.
