Learn how to make incredibly crispy and caramelized Brussels sprouts in your oven. This simple recipe is perfect for a weeknight side dish or a holiday meal.

  • 1.5 pounds Brussels sprouts, trimmed and halved
  • 3 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: 1 tablespoon balsamic glaze, 2 slices cooked bacon (crumbled), or 2 tablespoons grated Parmesan cheese

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, toss the Brussels sprouts with olive oil, salt, and pepper until evenly coated.
  3. Arrange the Brussels sprouts in a single layer on a baking sheet, cut-side down. This helps them crisp up.
  4. Roast for 20-25 minutes, or until tender and deeply caramelized. Flip them halfway through for even cooking.
  5. For extra flavor, toss with balsamic glaze, crumbled bacon, or Parmesan cheese in the last 5 minutes of roasting, or after removing from the oven.

Notes

  • For the crispiest sprouts, ensure they are dry before tossing with oil. Pat them with a paper towel if needed.
  • Don’t overcrowd the baking sheet; use two if necessary to allow for proper air circulation and crisping.
  • High heat is key to achieving that perfect crispy texture.
