You can make soft, chewy red velvet cookies in minutes using just a boxed cake mix and three other simple ingredients. This recipe is the ultimate shortcut for a delicious, festive treat.

  • 1 box (15.25 oz) red velvet cake mix
  • 1/2 cup unsalted butter, melted
  • 1 large egg
  • 1/2 cup white chocolate chips (optional, for extra flavor)

Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. In a medium bowl, combine the entire box of red velvet cake mix, the melted butter, and the egg. Mix with a spoon or spatula until just combined into a thick dough. Do not overmix.
  3. If you are using white chocolate chips, gently fold them into the dough now.
  4. Scoop the dough using a tablespoon or a small cookie scoop. Roll the dough into balls and place them about 2 inches apart on the prepared baking sheets.
  5. Bake for 8 to 10 minutes. The edges should look set, but the centers will still look slightly soft.
  6. Remove the baking sheets from the oven and let the cookies cool on the sheets for 5 minutes before transferring them to a wire rack to cool completely.
