Enjoy a lighter holiday dessert with these pumpkin pie baked apples. Tender apples filled with a spiced pumpkin mixture, baked to perfection.

Ingredients

  • 4 medium apples (like Honeycrisp or Fuji)
  • 1 cup pumpkin puree
  • 1/4 cup packed brown sugar
  • 1/2 teaspoon pumpkin pie spice
  • 1/4 teaspoon cinnamon
  • Pinch of nutmeg
  • 2 tablespoons chopped pecans or walnuts (optional)
  • 2 tablespoons melted butter or coconut oil
  • 2 tablespoons maple syrup

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Wash the apples. Cut off the top 1/2 inch of each apple and set aside.
  3. Use a spoon or melon baller to scoop out the core and seeds from each apple, creating a cavity. Be careful not to scoop through the bottom.
  4. In a medium bowl, combine the pumpkin puree, brown sugar, pumpkin pie spice, cinnamon, nutmeg, and chopped nuts (if using). Mix well.
  5. Spoon the pumpkin mixture evenly into the cavities of the apples.
  6. Place the cored apples in a baking dish.
  7. In a small bowl, whisk together the melted butter and maple syrup. Pour this mixture over the apples.
  8. Add about 1/4 inch of water to the bottom of the baking dish.
  9. Cover the dish loosely with foil.
  10. Bake for 30-45 minutes, or until the apples are tender when pierced with a fork. Baking time will vary depending on the size and type of apple.
  11. Remove the foil for the last 10-15 minutes of baking if you want a slightly firmer topping.
  12. Serve warm, with whipped cream or vanilla ice cream if desired.
