Ingredients
Scale
1 tablespoon olive oil
2 cloves garlic, minced
1 (16 ounce) package shelf-stable potato gnocchi
1 cup pumpkin puree
1/2 cup heavy cream
1/4 cup grated Parmesan cheese
2 tablespoons chopped fresh sage
Salt and black pepper to taste
Optional: pinch of nutmeg
Instructions
Heat olive oil in a large skillet over medium heat. Add minced garlic and cook until fragrant, about 30 seconds.
Add the gnocchi to the skillet and cook according to package directions, stirring occasionally, until lightly browned.
Stir in the pumpkin puree, heavy cream, and Parmesan cheese. Cook, stirring, until the sauce is heated through and slightly thickened.
Stir in the chopped fresh sage. Season with salt, pepper, and a pinch of nutmeg if desired.
Serve immediately.
Notes
For a vegan option, use full-fat coconut milk instead of heavy cream and nutritional yeast instead of Parmesan cheese.
You can add a protein like cooked chicken or sausage to make it a heartier meal.
Garnish with extra sage leaves or a sprinkle of toasted pumpkin seeds.
