I am so glad you are here. This Garlic Herb Roasted Pork Tenderloin recipe proves that incredible, soul-satisfying food does not need to be complicated. You will achieve a juicy, tender pork roast every time you use this simple oven-baked method. This is an approachable recipe perfect for weeknight dinners or when you need an impressive pork recipe.

Ingredients

Scale
  • 1 (about 1.5 lb) pork tenderloin
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme leaves
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika

Instructions

  1. Preheat your oven to 400°F (200°C). Lightly grease a baking sheet or line it with parchment paper.
  2. In a small bowl, combine the olive oil, minced garlic, chopped rosemary, thyme leaves, salt, pepper, and paprika to make the herb rub.
  3. Pat the pork tenderloin dry with paper towels. Place the tenderloin on the prepared baking sheet.
  4. Rub the herb mixture evenly over the entire surface of the pork tenderloin.
  5. Roast the pork tenderloin in the preheated oven for 20 to 30 minutes. The internal temperature should reach 145°F (63°C) when measured with a meat thermometer inserted into the thickest part.
  6. Remove the pork from the oven. Tent it loosely with foil and let it rest for 10 minutes before slicing. Resting is key to a juicy pork tenderloin.
  7. Slice the pork tenderloin into medallions about 1/2 inch thick and serve immediately.

Notes

  • For the juiciest pork tenderloin, use a meat thermometer. Do not overcook the meat.
  • You can substitute dried herbs for fresh herbs, using 1 teaspoon of dried rosemary and 1/2 teaspoon of dried thyme.
  • This recipe works well for an easy pork dinner; serve with roasted potatoes or rice.
