12 cups Rice Chex cereal
1 (12 ounce) package white chocolate chips
1 cup creamy peanut butter (or sunflower seed butter for nut-free option)
1 teaspoon vanilla extract
1 (3.4 ounce) box instant pistachio pudding mix
3 cups powdered sugar
Instructions
Measure the Rice Chex cereal into a very large bowl. Set aside.
In a medium microwave-safe bowl, combine the white chocolate chips and peanut butter. Microwave in 30-second intervals, stirring well after each, until the mixture is smooth and completely melted. This usually takes about 60 to 90 seconds total.
Stir the vanilla extract into the melted chocolate mixture.
Pour the melted white chocolate mixture over the cereal in the large bowl. Gently fold the cereal until it is evenly coated with the chocolate mixture.
Sprinkle the dry instant pistachio pudding mix over the coated cereal. Gently fold again until the cereal pieces are lightly coated with the green powder.
Place the powdered sugar into a large zip-top plastic bag. Add the coated cereal mixture to the bag. Seal the bag, leaving some air inside. Shake the bag until all the cereal pieces are thoroughly coated in powdered sugar.
Spread the finished pistachio puppy chow onto a large baking sheet lined with parchment paper to cool and dry completely.
