Instructions

  1. In a large bowl, beat the softened cream cheese until smooth.
  2. Add the powdered sugar, 1/2 cup brown sugar, heavy whipping cream, 1 teaspoon vanilla extract, and salt. Beat with an electric mixer until the mixture is completely smooth and creamy.
  3. Spread the cream cheese mixture evenly into a shallow serving dish.
  4. In a small saucepan, combine the remaining 1/2 cup brown sugar, melted butter, and corn syrup. Heat over medium heat, stirring constantly, until the mixture just begins to boil. Remove from heat immediately.
  5. Stir in the remaining 1/2 teaspoon vanilla extract and the toasted, chopped pecans into the warm caramel mixture.
  6. Pour the warm pecan topping evenly over the cream cheese base. Spread gently to cover the surface.
  7. Chill the dip for at least 2 hours before serving. This allows the dip to set and the flavors to blend.
  8. Serve cold with your favorite dippers like graham crackers, apple slices, or pretzels.
