Instructions
Preheat your oven to 350°F (175°C). Line a 9×13 inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.
Prepare the shortbread crust: In a medium bowl, combine the 1 cup softened butter, 1 cup granulated sugar, and 2 cups flour. Mix until crumbly.
Press the shortbread mixture evenly into the bottom of the prepared pan. Bake for 15 minutes until the edges are lightly golden.
While the crust bakes, prepare the gooey pecan filling: In a separate bowl, whisk together the brown sugar, corn syrup, 1/4 cup melted butter, eggs, and vanilla extract until smooth.
