Make these incredibly soft and chewy peanut butter cup cookies. They are packed with peanut butter flavor and chocolate, and you can have them ready to eat in under 30 minutes. This is a crowd-pleasing, decadent cookie recipe.

Ingredients

  • 1 cup (2 sticks) unsalted butter, softened
  • ¾ cup creamy peanut butter
  • ¾ cup packed light brown sugar
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 ¾ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup chopped peanut butter cups (or 1215 whole mini peanut butter cups, unwrapped)
  • ½ cup whole or mini peanut butter cups, for topping

Instructions

  1. Preheat your oven to 375°F (190°C). Line baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter, peanut butter, brown sugar, and granulated sugar until the mixture is light and fluffy. This takes about 2 minutes with an electric mixer.
  3. Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. In a separate medium bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Do not overmix the dough.
  6. Gently fold in the chopped peanut butter cups.
  7. Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  8. Press a whole or half peanut butter cup gently into the center of each dough ball.
  9. Bake for 9 to 11 minutes, or until the edges are set and lightly golden. The centers should still look slightly soft.
  10. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely. Press the tops down slightly as they cool if you want a flatter cookie.

Notes

  • For the softest cookies, use creamy peanut butter instead of natural or crunchy styles.
  • If you want to make these into peanut butter cookie cups, press the dough into a mini muffin tin and bake for 12-14 minutes, then press a whole peanut butter cup into the center immediately after removing them from the oven.
  • This recipe does not require chilling the dough, making it a quick peanut butter cookies option.
