  • 1 cup peanut butter
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 375°F (190°C). Line baking sheets with parchment paper.
  2. In a medium bowl, combine peanut butter, sugar, and egg. Mix until smooth.
  3. Stir in baking soda and vanilla extract until just combined.
  4. Roll dough into 1-inch balls and place them on the prepared baking sheets, about 2 inches apart.
  5. Use a fork to press down on each cookie, creating a crisscross pattern. This helps them bake evenly and stay soft.
  6. Bake for 8-10 minutes, or until the edges are lightly golden but the centers still look soft. Do not overbake if you want chewy cookies.
  7. Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
