A simple and delicious fresh peach dessert with a crunchy oat crumble, perfect for a quick summer treat.

  • 6 cups fresh peaches, sliced (about 68 medium peaches)
  • 1/4 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon lemon juice
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 cup gluten-free rolled oats
  • 1/2 cup all-purpose flour
  • 1/2 cup packed brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, toss the sliced peaches with granulated sugar, cornstarch, lemon juice, cinnamon, and nutmeg.
  3. Pour the peach mixture into a 9-inch oven-safe skillet or a baking dish.
  4. In a separate bowl, combine the gluten-free rolled oats, flour, brown sugar, cinnamon, and salt.
  5. Add the cold, cubed butter to the oat mixture. Use your fingers or a pastry blender to cut the butter into the dry ingredients until the mixture resembles coarse crumbs.
  6. Evenly sprinkle the oat crumble topping over the peaches in the skillet.
  7. Bake for 30-40 minutes, or until the topping is golden brown and the peach filling is bubbly.
  8. Let it cool for a few minutes before serving.

Notes

  • Serve warm with vanilla ice cream or whipped cream.
  • If peaches are not very sweet, you can add a little more sugar to the filling.
  • Ensure your rolled oats are certified gluten-free if needed.
