1/2 cup rolled oats
1/2 cup packed light brown sugar
1/4 teaspoon salt
1/2 cup (1 stick) cold unsalted butter, cut into cubes
1 1/2 cups sliced fresh or frozen peaches (about 2 medium peaches)
1 tablespoon cornstarch
2 tablespoons granulated sugar
1 teaspoon lemon juice
1/4 teaspoon ground cinnamon
1/4 cup powdered sugar (optional, for dusting)
Instructions
Preheat your oven to 375°F (190°C). Grease and flour an 8×8 inch baking pan.
In a medium bowl, combine the flour, rolled oats, brown sugar, and salt.
Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs.
Press half of the crumble mixture evenly into the bottom of the prepared baking pan.
In a separate bowl, toss the sliced peaches with cornstarch, granulated sugar, lemon juice, and cinnamon until evenly coated.
Spread the peach mixture evenly over the pressed crumble base.
Sprinkle the remaining crumble mixture evenly over the peaches.
Bake for 30-35 minutes, or until the topping is golden brown and the peach filling is bubbly.
Let the bars cool completely in the pan on a wire rack before cutting. This helps them set for clean slices.
Once cooled, dust with powdered sugar if desired. Cut into bars and serve.
