A simple, make-ahead pasta salad perfect for picnics and potlucks. This Italian-inspired dish features a zesty vinaigrette and is easy to transport.

Ingredients

  • 1 pound rotini pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, finely chopped
  • 1/2 cup black olives, sliced
  • 1/2 cup green bell pepper, diced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup Italian dressing

Instructions

  1. Cook pasta according to package directions. Drain and rinse with cold water.
  2. In a large bowl, combine cooked pasta, cherry tomatoes, cucumber, red onion, black olives, green bell pepper, and parsley.
  3. Add Parmesan cheese and Italian dressing. Toss gently to coat all ingredients.
  4. Cover and refrigerate for at least 1 hour before serving to allow flavors to meld.
