You can make this Parmesan Crusted Tilapia quickly for a satisfying weeknight dinner. The fillets bake to a tender, flaky inside with a golden, crispy parmesan crust.

Ingredients

Scale
  • 4 (5-ounce) tilapia fillets
  • 1 tablespoon olive oil
  • 1/4 cup mayonnaise
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup Panko breadcrumbs
  • 1 teaspoon garlic powder
  • 1/2 teaspoon dried parsley
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 lemon, cut into wedges for serving

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Lightly grease a baking sheet or line it with parchment paper.
  2. Pat the tilapia fillets dry using paper towels. Place them on the prepared baking sheet.
  3. In a small bowl, mix the olive oil and mayonnaise until combined. Brush this mixture evenly over the top surface of each tilapia fillet.
  4. In a separate shallow dish, combine the Parmesan cheese, Panko breadcrumbs, garlic powder, dried parsley, salt, and black pepper. Mix these dry ingredients well.
  5. Press the top of each fillet firmly into the Parmesan mixture, coating the mayonnaise side completely to create a thick crust.
  6. Bake for 12 to 15 minutes, or until the fish is opaque and flakes easily with a fork, and the crust is golden brown and crisp. Cooking time depends on the thickness of your fillets.
  7. Remove from the oven and serve immediately with fresh lemon wedges.

Notes

  • For an extra crispy crust, you can briefly place the fillets under the broiler for the last 1-2 minutes, watching closely to prevent burning.
  • You can substitute tilapia with other firm white fish like cod or haddock.
  • This recipe works well in an air fryer; cook at 380 degrees Fahrenheit for 8-10 minutes.
